Jenny wasn’t feeling well today, so I threw together a veggie Jenny wasn’t feeling well today, so I threw together a veggie stir fry to help her through it. I started with some firm tofu cut into small cubes and sprayed with Bragg Aminos
(or soy sauce) before browning it in peanut oil. I set it aside.

Ginger and garlic were next, shredded with a great grater
, mixed with chopped onions and sautéed until the onions were clear.

Then I added every vegetable we had – mushrooms, green onions and red, yellow and green bell peppers – tossed in the browned tofu, and just before it was all heated through, I added a handful of chopped cilantro.

I seasoned it with a dash of hot pepper oil, the juice of one lime and more Bragg Aminos. It was pretty
good, but I’d add a lot more ginger next time.

Today we got our first daffodil bloom – and I noticed our first dandelion bloom, too. The lack of rain has made everything come up slower this year. Every few days I dig in the leaves around our asparagus patch, but there’s still no sign of it.
