Friday we had a beautiful beet salad – roasted beets and greens from the garden, roasted portobellos and mango. The deep, rich purples and greens of the beets surrounded beaming bits of mango. Luxurious, earthy and tropical. A little couscous with red and yellow tomatoes (more from the garden!) balanced it out.
